- 2 sweet potatoes (medium, peeled and chopped into small pieces, about ¾ inch)
- 1 Tbsp. avocado oil (divided)
- sea salt
- freshly ground black pepper
- 4 kale leaves (large curly, destemmed and torn into bite-size pieces, about 2 cups)
- 4 eggs
- 1/4 cup pesto (cilantro-pepita, see recipe below)
- 2 cups cilantro leaves (lightly packed, and tender stems)
- 1 cup parsley leaves (lightly packed, and tender stems, or just use more cilantro!)
- 1/3 cup pepitas (raw, unsalted)
- 1 clove garlic (smashed, optional)
- 1 Tbsp. lime (fresh-squeezed, or lemon juice)
- 1/2 tsp. sea salt (or more to taste)
- freshly ground black pepper (to taste)
- 2/3 cup extra virgin olive oil
