I will definitely be making this again! I was leary because food from this region typically isn't my favorite bt this was sooo good! The dipping bread is a must.

Turned out pretty good I put 1 1/2 teaspoon of red pepper in it and it made it quite spicy so maybe I should’ve just stuck to 1 tsp like it said but I love and can deal with spicy so that wasn’t so much of a bad thing for me also like someone else on here said, peeling the eggplant before cooking it is a good suggestion, as it made it was a tad bit not as soft as it maybe should’ve been this recipe has lots and lots of chopping so make it a few hours before your actual usual dinner time but I will be making this again!

This turned out to be a soupy mix of bitter vegetables. I won't be making this again with this mix of veggies. I salted the eggplant beforehand to try to get rid of some of the bitterness and moisture. I didn't peel it though which I definitely recommend doing. The portobellos were wasted in this as you couldn't even taste them. I added some honey to cut into the bitterness. Overall, quite disappointing.
