- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 2 Tbsp. tomato paste
- 1 tsp. dried oregano
- freshly ground black pepper
- 1/4 cup red wine
- 15 oz. tomato sauce (1 can)
- 2 Tbsp. unsalted butter (cold)
- freshly grated Parmesan (for serving)
- 2 lb. chicken breasts (thawed)
- 1 1/2 Tbsp. cornstarch
- 1/4 cup water
- sriracha sauce (to taste)
- 4 Tbsp. sweet chili sauce (3-, Asian)
- 1/3 cup low-sodium soy sauce
- 1/3 cup ketchup
- 1/3 cup packed brown sugar
- 2 Tbsp. hoisin sauce (quality, like Lee Kum Kee or Kikkkoman)
- 2 Tbsp. rice wine vinegar
- 1 Tbsp. toasted sesame oil
- 1 1/2 tsp. garlic powder (or 3-4 garlic cloves minced)
- 1/2 tsp. onion powder
- 1/2 tsp. ginger (powder, or 2 teaspoons freshly grated ginger)
- 1 tsp. salt
- 1/4 tsp. pepper
- toasted sesame seeds
- green onions (chopped)
- 1 piece salmon fillet (I love thick pieces for grilling)
- kosher salt (or organic sea salt)
- freshly cracked black pepper
- 2 herbs (1-, you have in the pantry, I used dried parsley – optional)

- 1 stalk lemongrass (white part only, pounded and bruised)
- 6 kaffir lime leaves (5-, bruised)
- 5 slices galangal (4-, fresh)
- 1/2 small tomato (cut into 3 to 4 wedges)
- 6 shrimp (medium-sized, shelled and deveined)
- 6 straw mushrooms (canned, or fresh oyster mushrooms, cut into halves)
- 1 1/2 Tbsp. nam prik pao (Thai roasted chili paste)
- 1/2 Tbsp. fish sauce ( or to taste)
- 3 dashes chili powder
- 1 1/2 Tbsp. lime juice
- cilantro leaves (for garnishing, optional)
