This was seriously amazing. Loved that it was so healthy! Cooked according to directions in a cast iron skillet and it made for the perfect brunch food. I love anything with smoked paprika. Eggs came out beautifully runny. I didn't have any feta so I used some Vermont goat cheese and it was absolutely delicious. This is going in my brunch rotation for sure.

Trust me when I say I am not a veggie person...the fact that this dish was made mostly of veggies made me cringe but I was going through a health kick so I decided to try it. It is SO good! It is a little sweet, very savory and quite filling. Also quick and simple to make.
