- 1 Tbsp. cilantro (finely chopped)

- 1/2 Tbsp. brown rice vinegar
- 1/2 Tbsp. soy sauce
- 1 Tbsp. canola oil
- freshly ground pepper (sea salt and, to taste)

- 1/2 pkg. noodles (udon, found in the Asian section of grocery stores)
- 2 carrots (thinly peeled into long ribbons, use a vegetable peeler to peel them)
