These low-carb Sesame Peanut Zucchini Noodles are sure to please your palate, as well please your waistline. They are so delicious!
Ingredients

4 SERVINGS
- 1 zucchini (medium sized, about 2″ diameter is perfect)
- 1 Tbsp. tamari (like soy sauce)
- 1 tsp. rice vinegar
- 3 Tbsp. creamy peanut butter
- 1/2 lime
- 1 Tbsp. toasted sesame seeds
- noodle (Zucchini, spiralizer)
- 1 Tbsp. toasted sesame oil

Directions
- Use the zucchini cutter to make noodles from your zucchini. Put them in a bowl and set aside.
- In a bowl, whisk together all of the other ingredients except for the sesame seeds. Once incorporated, pour the sauce over the noodles and stir.
- Toast the sesame seeds for about 2-3 minutes in a toaster or a skillet, and sprinkle on the noodles.
