  • 1/3 cup 2% milk
  • 3 cups all-purpose flour
  • 2 teaspoons active dry yeast
  • 1/4 cup sugar
  • 5 tablespoons butter (softened and diced)
  • 4 egg yolks
  • 6 slices manchego cheese
  • 12 slices serrano ham

    Directions

    1. In a saucepan, heat the milk until lukewarm. Place the flour in a bowl, make a well in the center, and add the yeast and 2 tbsp sugar. Pour in the milk and mix with flour from the edge of the well into a thick paste. Cover and let rest for 20 minutes.
    2. Add the butter, 1/4 cup sugar, 3 egg yolks, and a pinch of salt to the flour mixture and knead with the dough hook of a mixer into a smooth dough. Cover and let rest for 40 minutes.
    3. Line a baking sheet with parchment paper. On a floured surface, roll the dough into a 16 inch x 10 inch rectangle, Cut into 6 equal pieces and roll each piece up tightly from one corner into a croissant shape. Place on the baking sheet. Cover loosely and let rest in a warm place for 30 minutes.
    4. Preheat the oven to 400°F. In a bowl, beat 1 egg yolk and 2 tbsp water. Brush over the croissants and bake for 15 minutes. Allow to cool on a wire rack.
    5. Cut croissants in half horizontally and fill with a slice of cheese and 2 slices of ham.
