Description
Semolina can be prepared in much the same way as polenta (or cornmeal) to create a soft and luscious bed for all manner of toppings. In this recipe, the semolina is combined with sauteed shrimp and chopped red pepper, with garlic and lemon juice as the seasonings. When preparing the semolina (as with polenta), be sure to mix it with the boiling water gradually while constantly stirring and to only cook it until it is al dente and no longer.

- semolina (to taste)
- 3 tsp. olive oil
- salt and ground black pepper
- water (to taste)
- 1 cup shrimp (frozen)
- 2 garlic cloves
- 1/4 red bell pepper (chopped)
- 1/2 lemon (juice)
- chives (to taste)

Directions
- Cook the semolina in boiling water until al dente. Season with olive oil, salt and pepper.
- Heat a bit of olive oil and sauté the shrimp with garlic until done. Add to the semolina along with the diced pepper. Sprinkle with lemon juice and chives to taste.
