- Flours are weighed and reserved.
- Beat the eggs and yolks with the sugar until they blanch, 3-4 minutes in the Thermomix with the butterfly at speed 5 and 37 ºC. If you do not have Thermomix, you already know that the assembly is accelerated by beating the mixture in a bowl inserted in another bowl with warm water, since the temperature helps aeration.
- The oven is heated to 180 ºC.
