  • 150 grams sugar
  • 200 grams flour (medium strong)
  • 100 grams rice flour ((potato starch in the original))
  • 25 grams butter (melted)
  • 2 tablespoons water (lukewarm)
  • 250 grams sugar
  • 200 milliliters water
  • 1 glass liquor ((I put sweet wine))
  • 7 egg yolks
  • 150 grams sugar
  • 75 milliliters water
  • 500 grams ground almonds
  • 500 grams icing sugar
  • 2 egg whites

    Directions

    1. Flours are weighed and reserved.
    2. Beat the eggs and yolks with the sugar until they blanch, 3-4 minutes in the Thermomix with the butterfly at speed 5 and 37 ºC. If you do not have Thermomix, you already know that the assembly is accelerated by beating the mixture in a bowl inserted in another bowl with warm water, since the temperature helps aeration.
    3. The oven is heated to 180 ºC.
