- 500 grams warm water
- 30 grams fresh yeast (or 15g dried active yeast)
- 250 grams buckwheat groats (coarsely chopped, I use a foodprocessor to do this)
- 250 grams buckwheat flour
- 200 grams seeds (mixed, e.g. pumpkin seeds, sesame seeds, chia seeds and linseeds – keep apart 3 tablespoons of the mixed seeds to scatter on top of the loaf before baking.)
- 10 grams salt
- 25 grams psyllium husk
