I would add bay leaves and pancetta as well. Putting the pan in the oven is key if you are not cooking over an open flame or you'll have to move the pan around because the side rice doesn't get as cooked! I also put a bottle (just over a cup) of clam juice in addition to the chicken stock. Very tasty!
