- 5 Tbsp. usukuchi shoyu (light colored soy sauce)
- 1 1/2 Tbsp. shoyu (soy sauce)
- 1 1/2 Tbsp. sugar
- 2 qt. water
- 11 inches dried kelp (squares of, kombu)
