  • 1 medium onion
  • 1 medium carrot
  • 1 rib celery
  • 1 strip bacon (uncooked)
  • 2 cloves garlic
  • 2 1/2 cups low fat milk (or whole milk)
  • 2 1/2 cups vegetable broth
  • 1 potato (cut into 1/4-inch pieces)
  • 1 pinch thyme leaves (finely chopped)
  • 8 ounces frozen shrimp (peeled and deveined, uncooked)
  • cod (cut into 1- to 2-inch pieces)

    Directions

    1. Melt the butter in a large soup pot over medium heat.
    2. Add the diced onion, shredded carrot, diced celery and finely chopped bacon; cook until the vegetables are tender, and the meat starts to sizzle.
    3. Add minced garlic. Add the milk of choice and the vegetable broth, stir, increase the heat to medium-high, and bring to a boil.
