- 2 Tbsp. unsalted butter
- 1 medium onion
- 1 medium carrot
- 1 rib celery
- 1 strip bacon (uncooked)
- 2 cloves garlic
- 2 1/2 cups low fat milk (or whole milk)
- 2 1/2 cups vegetable broth
- 1 potato (cut into 1/4-inch pieces)
- 1 pinch thyme leaves (finely chopped)
- 8 oz. frozen shrimp (peeled and deveined, uncooked)
- cod (cut into 1- to 2-inch pieces)
- salt
- black pepper

Directions
- Melt the butter in a large soup pot over medium heat.
- Add the diced onion, shredded carrot, diced celery and finely chopped bacon; cook until the vegetables are tender, and the meat starts to sizzle.
- Add minced garlic. Add the milk of choice and the vegetable broth, stir, increase the heat to medium-high, and bring to a boil.
