I enjoyed the recipe but made the following changes.
Things done to make it more my style
Added a carrot and 1/2 a Red Shepard Pepper, medium leek.
I used 1 Lb of Cod and 8oz of Monk fish instead of the recipe protiens.
Monk Fish is "The poor mans lobster" I prefer it instead of lobster.
Used chicken stalk instead of water.
Add an extra 1/2 Cup milk and 1/2 cup creme 1 cup chicken broth
Used milk instead of half and half
Made a rue of 1/3 flour and 1/3 butter
Thyme and finishing salt are importand and quite nice.
Added 1 1/2 cups of corn
Sprinkle of cayenne pepper

I just want to eat this chowder all week! I didn't have milk so I used part cream and part coconut milk. Easy to make and very delicious. The Esquire knows how to make chowder!!!
