  • 51 ounces clams (chopped, retain juice, equal to 3¾ cups clam juice and 3¾ cups chopped clams)
  • 1/2 cup green onion (chopped)
  • 1 yellow onion (small sweet, finely chopped, about 1 cup)
  • 1 cup chopped celery
  • 3 1/2 red potatoes (medium, scrubbed, unpeeled, cut into ½" cubes)
  • 1 celery root (small, about the size of a large orange -- peeled, cut into ½" cubes)
  • 2 parsnips (medium, peeled, cut into ½" cubes)
  • 3 3/4 cups clam juice (from canned clams)
  • 1 1/2 teaspoons dried thyme
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon white pepper
  • 2 cups heavy cream
  • 1 cup milk (as needed for desired thickness)
  • 1/2 tablespoon flavoring (liquid smoke)
  • 1 1/2 teaspoons fresh thyme leaves (tender leaf stems are okay too)
  • 1 pound white fish (halibut, Barramundi, cod -- cut into bite sized chunks)
  • 1 pound shrimp (cut into bite sized chunks)
  • 1/2 teaspoon fresh ground black pepper
