- 3/4 lb. bacon (cooked, chopped)
- 51 oz. clams (chopped, retain juice, equal to 3¾ cups clam juice and 3¾ cups chopped clams)
- 1/2 cup green onion (chopped)
- 1 yellow onion (small sweet, finely chopped, about 1 cup)
- 1 cup chopped celery
- 3 1/2 red potatoes (medium, scrubbed, unpeeled, cut into ½" cubes)
- 1 celery root (small, about the size of a large orange -- peeled, cut into ½" cubes)
- 2 parsnips (medium, peeled, cut into ½" cubes)
- 3 3/4 cups clam juice (from canned clams)
- 1 1/2 tsp. dried thyme
- 1/2 tsp. sea salt
- 1/2 tsp. white pepper
- 2 cups heavy cream
- 1 cup milk (as needed for desired thickness)
- 1/2 Tbsp. flavoring (liquid smoke)
- 1 1/2 tsp. fresh thyme leaves (tender leaf stems are okay too)
- 1 lb. white fish (halibut, Barramundi, cod -- cut into bite sized chunks)
- 1 lb. shrimp (cut into bite sized chunks)
- 1/2 tsp. fresh ground black pepper
