Sea bream are deep bodied fish that resemble freshwater bream. They are a hearty and healthy fish that are perfect for this recipe. If you are going to eat a fish raw, it is important to make sure the meat is hearty enough to keep its texture, and fresh enough to maek sure the flavors are rich. This dish combines the raw fish with sweet and tangy ingredients, such as pomegranates, for a powerful punch to the palate.

- 2 Tbsp. pomegranate seeds (fresh)
- 1/2 chives (a bunch of, finely chopped)
- 1/2 lime
- 1 Tbsp. lime juice
- olive oil (a drizzle of)
- salt
- pepper

Directions
- Remove the skin and bones from the sea bream fillets. Cut the fish into small cubes. Add the lemon zest, chives, olive oil and pomegranate. Reserve in the fridge.
- Just before serving, add the lemon juice, salt and pepper and mix well. Serve in small glasses or as a starter with toasted baguette slices.
