  • 4 sea bass fillets (skin scored)
  • 2 tablespoons lemon juice
  • 4 1/2 ounces smoked bacon (diced)
  • 4 tablespoons canola oil
  • 1 pound button mushrooms (sliced)
  • 1 onion (finely diced)
  • 1 pound cherry tomatoes
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups arugula

    Directions

    1. Drizzle fish fillets with lemon juice and season. Set aside.
    2. Heat a deep frying pan, add bacon and fry until crisp. Remove from pan and set aside. Add 1 tbsp oil, mushrooms and onion and season. Sauté for 3-4 mins. Add tomatoes and bacon along with 5-6 tbsp water, bring to a boil then simmer for 1-2 mins.
    3. Meanwhile, dust fish fillets with flour and tap off excess. Heat 2-3 tbsp oil in a frying pan, add fish fillets skin-side down and sear for 2-3 mins. Turn and cook for another 30 seconds - 1 min. Fold arugula into bacon and vegetables then distribute between 4 plates. Place a fish fillet on each plate then serve.
