Salmon fillets marinated in vodka and OJ. Two flavors that enhance but don't hide the delicate flavors of this or any other fish. Works particularly well with salmon.

  • 4 salmon fillets (approx. 1lb)
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1 tablespoon vodka (optional)
  • 1 package seasoning mix (Italian Salad Dressing)
  • cooking spray (such as Pam)

    Directions

    1. COMBINE juice, vodka, olive oil and seasoning mix
    2. POUR over salmon and refrigerate, covered for 1 hour.
    3. DRAIN marinade from salmon and discard the marinade
