- 1 cup milk powder
- 2 cups white wine
- 4 Tbsp. pork fat
- 1 cup leeks (spring, chopped)
- 2 cups pork stock
- 2 cups polenta
- 1 cup braised pork
- salt (To taste)
- pepper (To taste)

Directions
- 1. For the Scrapple: Sweat leeks in fat. Pour in the stock and bring to a boil then whisk in polenta and cook for 15-20 minutes until polenta is cooked. Toss in braised pork and season with salt and pepper. Pour onto parchment lined sheet tray and chill to set. Cut into desired shape
