Description
This egg dish is great for brunch, especially on Easter. Tender scrambled eggs are paired with smoked salmon and chives then served in delicate egg shells for a stunning and impressive presentation. While the preparation and filling of the egg shells is a bit of a task, it will be worth it in the end when you have a beautiful dish to present to your guests and family.

- 4 eggs
- 2 slices smoked salmon
- 1 Tbsp. cream (liquid)
- 1 Tbsp. chive (finely chopped)
- salt
- ground black pepper

Directions
- Cut the top of the eggs off with an egg slicer. Pour the eggs into a bowl. Gently clean the shells with clean water and let them dry.
- Cut the salmon slices in small strips.
- Add the cream and the chives to the eggs. Salt and pepper lightly. Whisk lightly with a fork and cook in double boiler while stirring with a spatula. When the mixture is almost cooked, add the smoked salmon, and mix.
- Pour the mixture into the shells. If there is mix left over, serve on sugar lettuce leaves.
