- 1/2 tsp. seasoned salt
- 3 Tbsp. onion (diced)
- 1 cup cooked ham (diced, could also use cooked bacon or cooked sausage)
- pepper (to taste)
- 1/4 tsp. garlic powder
- 1/4 cup red bell pepper (diced)
- 1/4 cup fresh mushrooms (diced, I sauteed mine first)
- 1 cup shredded cheddar cheese (I use sharp)
- 1/2 cup baby spinach (finely shredded)

Easy to make and delicious. Make sure not to fill the muffin tins to the brim because it does expand with cooking.

Not bad, but it is a decent amount of work for the payoff. They’re pretty tasty and it’s helpful that you can swap the mix-ins. If it’s helpful having little individual breakfasts, then this may be worth it. But if it’s for a breakfast, in general, maybe not.

I added sour cream as suggested to make it fluffy. Tastes great, but I really need to grease the muffin tray more to prevent sticking.

I made these the other day and came out great! I used bacon instead of ham and did 1/2 cup of each veggie.. i was experimenting with how to bake them.. i put some in foil cupcake holders, some in paper (2paper cups per muffin) and did some just straight in the tin with cooking spray.. the paper ones came out a little soggy, the foil ones came out great and the ones straight from the tin were good but they were brown around the sides.. defn will make these again they were a hit!

I spooned the vegetable mixture into the muffin pan and then poured the egg mixture into the cups.

I found the instructions easy to follow, and added a bit of cream. I'll be making these again and use different ingredient combinations!

These were so easy and good. I like how the recipe is written so you can add whatever you like. My mix with 12 eggs (per the directions) actually made 15 muffins instead of 12 because I put so much stuff in them. Turned out great and made for a great breakfast all week.

They turned out fantastic! I sprinkled the tops with Everything Bagel seasoning before baking and my husband loved them. It’s a tasty, quick breakfast option for people on the go!

Absolutely fabulous!! I used a Colby-Jack cheese blend. I'll definitely be making again. They freeze great for quick breakfast at home or work. Simply reheat and you are all set!

I made a version of scrambled egg muffins this evening they were awesome instead of milk I used my vanilla almond milk, green peppers, diced onions and diced tomatoes. When I took them out of the oven I sprinkled Kraft creamy melt Mexican 4 cheese which has a touch of Philadelphia cream cheese I just had one and the taste was fabulous. Thanks for the wonderful tip.

Easy and delicious. Can make ahead and bake when you want it. I did not have mushrooms, but they tasted fine without it.

this was delicious!! i didn't have mushrooms, red pepper, or seasoning salt (i used plain salt 1/4 tsp). I only had triple cheddar cheese. I used cooked bacon. i didn't quite follow the recipe, only because i woke up this morning thinking about egg muffins so i used the ingredients that i had.

These were easy to make and great! An easy breakfast on the go. I used bacon and both red and green peppers. They were all gone in 2 days!

I enjoyed them. Fun to make & I'd make them again. They rose for me then imploded shortly after :) I chopped some mushrooms, and bacon bits instead of ham. Yummy!

I used accent seasoning, bacon, canned spinach and jarred mushrooms. Came out great! Very deelish!!!!
