The trick is to remove from the heat as soon as it starts boiling. I also add a 1/2 stick of butter to the sugar/corn syrup mixture. It keeps them from drying out too soon.

These were great. I boiled the sugar too long so they were hard as rocks after their initial “soft phase”. Good thing they were so good, most of them were eaten before they hardened!
