Nice muffins I mix up the veggies but kept the original mix. I like it a little salty so….

Deeelicious. Appreciate the tips on storing, too. I subbed sautéed porcini mushrooms in place of olives; & did a combo of fresh basil and baby kale leaves to substitute for the spinach. The recipe is a keeper.

Great used red peppers instead of sun dried tomato, doubled the Parmesan cheese, added garlic and cracked black pepper.

We put corn, bacon, peas, feta and sundried tomatoes in them with a bit of creamed corn also, they were a great texture, just needed some salt and pepper.

Really good, but missing something to tie it all together? Next time would add dried mixed herbs or spring onion or more cheese! Also, forgot to add salt and pepper, definitely would reccomend!
