Quite nice. Next time I'll add more liquid as it had dried up before the carrots cooked and that was cooking for about twice the stated time. I also added some garam masala. Maybe I should've added more curry instead. I will do it again though with extra curry powder. :)
- Made this again, slicing carrots thin with a mandolin which made them just done with a slight crunch. From such a simple ingredient list comes a very tasty meal. I used a bit more curry this time. Don’t know what happened last time with liquid drying up, etc, but it was great this time around.

Really great recipe. Simple ingredients. I used Minced (vegetarian mince meat) as a substitute and it was scary how similar to meat. But tasted great...
