- 4 bacon (rashers)
- 4 day old bread (very thick-cut, about 1-inch or more is ideal slices of, I used this no-knead challah made with this filling)
- 2/3 cup shredded mozzarella cheese (or cheese of your choice -- I substituted a handful of shredded smoked Gouda; Gruyere would also work wonderfully)
- 1 egg
- 1/3 cup milk
- 1 Tbsp. grated Parmesan cheese
- salt
- pepper
- 1 tsp. minced garlic
- 3 tsp. bacon grease (reserved, from above, for frying)
- maple syrup (for serving, optional, but I love it)
