- 1 onion (chopped, about 1 1/2 cups)
- 1 red pepper (cored, seeded and diced)
- 1 apple (large, diced small)
- 2 tsp. garlic (minced, or 1/2 tsp garlic powder)
- 3 cups baby spinach (fresh, roughly chopped)
- 110 grams goat cheese (crumbled, about 1/2 cup)
- 1 tsp. thyme (rosemary or sage)
- 1 tsp. smoked paprika
- 3/4 tsp. kosher salt
- 1/2 teaspoon ground pepper
- 1 frozen puff pastry sheet (defrosted, usually comes two pre-rolled 10 x 10 sheets per box)
- 1 egg (with a teaspoon water.)

This was delicious and surprisingly easy for a relative beginner like me! I used prepared phyllo dough from the grocery store (two sheets, each 10 x 10 inches) and ended up with two smaller strudels. I will definitely make this again and maybe next time only use half of everything.
