- 3 cups spinach (or Swiss chard, coarsely chopped)
- 4 large eggs
- 2 cups half-and-half (or 1 cup heavy cream and 1 cup whole milk)
- 2 tsp. Dijon mustard
- 2 tsp. kosher salt (plus more to taste)
- 1 tsp. fresh thyme leaves
- ground black pepper (Freshly)
- 1/4 cup grated Parmesan cheese (for the top)
