- 1 1/2 lb. pork shoulder (seasoned)
- 1 baguette (day old, cubed)
- 3 cups chicken stock
- 1 cup onion (diced)
- 1 cup celery (diced)
- 1 tsp. fresh thyme (chopped)
- 1 tsp. Italian parsley (fresh)
- 1/2 tsp. salt
- 1/4 tsp. black pepper (fresh ground)
- 1 cup heavy cream
- 1/2 Tbsp. cornstarch
- 1 Tbsp. water
- 1/2 cup Buffalo Trace bourbon

Directions
- 1. Preheat the oven to 325 degrees F.
- 2. Roast seasoned pork shoulder covered at 290 degrees for 4 hours or until fork easily permeates shoulder meat.
- 3. Heat the canola oil in a large skillet over medium heat and sauté the onion and celery until slightly browned.
