I made a very large batch for freeze ahead meals. I misread ingredients and bought bacon, so I made the recipe with bacon and ham- very good mistake! I also had one Yukon gold potato, so I prepared both it and the yucca- almost no discernible difference. I froze 6- one cup portions, will have to wait and see how it reheats. Made fresh, it was a "keeper".
