Description
Choux pastry can be an intimidating task to take on, but once you have it mastered the possibilities are endless. This recipe makes a savory choux dough that is spinkled with parmesan cheese during the last five minutes of baking for an extra bit of flavor. Once baked, you can stuff these with a savory cream accented with fresh herbs or pair them with a meat and cheese combination for a savory little appetizer.

- 120 mL water
- 43 grams butter
- salt
- 67 grams flour
- 120 mL egg (2 eggs plus 1 yolk)
- Parmesan cheese (optional)

Directions
- Preheat the oven to 220 degrees Celsius.
- In a saucepan, melt the butter and add the water and a pinch of salt. When it boils, add the flour and stir vigorously with a wooden spoon. The batter will become a ball. Cook for 2 more minutes.
- Remove from the heat. Place in a bowl and use an electric mixer to mix until the batter is warm. Slowly add the egg. Keep beating to ribbon stage.
- Place the batter in a pastry bag with a smooth tip. Shape the choux in any desired way.
- Bake for 10 to 15 minutes. When their color is slightly golden brown, reduce the oven temperature to 190 C. Sprinkle Parmesan cheese 5 minutes before removing from the oven. Bake until they are firm to the touch.
