- 1 1/2 cups butternut squash (peeled and cubed)
- 1/2 cup coconut cream (skimmed off of the top of a can of coconut milk)
- 2 Tbsp. coconut oil (melted)
- 1 1/4 cups green peas (if using frozen, thaw prior to adding to recipe)
- 1 Tbsp. apple cider vinegar
- 1 tsp. sea salt
- 1 tsp. garlic powder
- 1/2 tsp. black pepper
- 1/2 tsp. oregano
- 1/2 tsp. thyme
- 1/2 tsp. onion powder

This was really good. I omitted the coconut oil to save on calories and bought shredded chicken breast so I didn't need to cook it myself. Simple, quick, tasty meal.

Great basic recipe! There is so much room for improvement by adding bacon, or ham, or cheese if you do the dairy. Green onions would have made an excellent addition as well. As-is, it's a bit plain, but I like that it's easy to enhance and can be DF, GF, Paleo.

i just didnt like it. If i did try to make it again, i would def cut down on the coconut cream.

Very good meal with a nice taste but didn't blow me away. Good comfort food with a slight sweet taste.

I loved it! Not much else I can say. For someone trying to eat well but also looking for a meal that tastes comforting and "indulgent", this is a wonderful dish!

Not the most attractive dish but it sure was good! Will definitely make it again. I added a bit more garlic and onion but otherwise stuck to the recipe.

Delicious! I added a tsp of chili powder. Boiled the chicken without broth and still came out great! Used half of a butternut squash and baked the other half as a side dish.
