Directions
- Melt I Can't Believe It's Not Butter!® Spread in 12-inch nonstick skillet over medium heat and cook shallots, stirring occasionally, 1 minute or until almost tender. Add carrots and snow peas and cook, stirring occasionally, 4 minutes or until crisp-tender. Stir in parsley and heat through.

This was a great recipe. I de-veganized it by using real butter. Added some garlic to the shallots for additional aromatics, as well as a few dashes of soy at the end for a little umami. Delicious! I will make it again.
