- 2 Tbsp. promise buttery spread
- 1 potatoes
- 2 corn-on-the-cob
- 1 cup sweet onion
- 14.5 oz. fat free less sodium chicken broth
- 2 tsp. chopped fresh cilantro (optional)
- 1/8 tsp. ground black pepper
- 2 tsp. lime juice

Directions
- Melt Promise® Buttery Spread in 4-quart saucepan over medium heat and cook potatoes, corn and onion, stirring occasionally, 5 minutes or until corn turns golden and potato start to stick. Stir in broth, scraping up any brown bits from bottom of saucepan. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 15 minutes or until potatoes are tender. Lightly mash with fork or potato masher until creamy. Stir in remaining ingredients.

Awesome! I was skeptical it would not be creamy enough, but I liked it better! Not oily or too fatty. Added some Old Bay and it was great! Thinking about browning the corn in one pan and the onions and potatoes in another. I did not follow the recipe I probably doubled it. Might add some roasted red peppers too!
