Description

Your kids may be used to turning up their nose at brussel sprouts, but these delicious sprouts will be hard to say no to. Sweet and tangy, the crunch of carrots and almonds, these brussel sprouts are the perfect addition to your dinner. Ideal served alongside roasted fish or meat.

Ingredients

  • 250 grams brussels sprouts (halved)
  • 1 carrot (large, or 2 medium ones)
  • 3 tablespoons olive oil
  • low sodium salt (to taste)
  • 1 teaspoon balsamic vinegar
  • 2 tablespoons honey
  • 5 dried figs
  • 1 tablespoon chopped almonds

    Directions

    1. Heat a pot of water and, once boiling, add the Brussels sprouts and carrots. Bring the water back to a boil, and then remove it from the heat and strain the vegetables.
    2. Heat a frying pan over medium heat with a bit of olive oil. Once it is hot, add the Brussels sprouts and carrots and saute them. Season them with several pinches of salt and the balsamic vinegar. Then add the honey and dried figs and stir well.
    3. Cook the vegetables until until they are carmelized, or light golden brown. Sprinkle with the almonds and stir again, then remove from the heat.
    4. Serve as a side dish.

    Made this tonight and it turned our really well. My wife suggested I add this to my permanent list of side dishes. For others who made this, why boil the Brussels sprouts before sauteing? And how long did you saute before adding honey?
