  • 1 clove garlic (finely chopped)
  • 1 1/2 cups baby carrots
  • 4 ounces broccoli florets (about 2 cups)
  • 2 teaspoons finely chopped fresh parsley
  • 1 red bell pepper, sliced (large)
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

    Directions

    1. Melt I Can't Believe It's Not Butter!® Spread in 12-inch nonstick skillet over medium-high heat and cook carrots, red pepper and broccoli, stirring occasionally, vegetables are until crisp-tender, about 6 minutes. Stir in garlic and cook 30 seconds. Stir in parsley, salt and black pepper.

    It seemed like an odd combination but was delicous. I did precook the carrots a bit, but otherwise followef the recipe.
