You can prepare the gourd by itself or you can add pork and shrimps ... and in this particular recipe - my Nanay (mother ) used dried salted fish and rice wash/water to make the dish a little "soupy". The salted fish has to be soaked at least 4 hours so it will not be too salty. When soaked, the dried fish will just give a hint of that dried salty taste.. You will get this wonderful taste of the gourd and the salted fish in your soup. Upo is low in fat and cholesterol yet high in dietary fiber. It contains vitamins and minerals. easy to make and simply delicious!

  • bottle gourd (1 large, upo, peeled, spongy and seeded part removed; sliced into bite-sized pieces)
  • 2 tablespoons cooking oil
  • 3 cloves garlic (minced)
  • 1 onion (medium sized, sliced)
  • 2 tomatoes (medium sized, diced)
  • rice (wash or water, optional)
  • 1 pound red snapper (dried salted, or any dried salted fish - soaked for at least 4 hours then cut to pieces)
  • ground pepper (to taste)

    Directions

    1. Heat cooking oil in a sauce pan or wok; add garlic, cook a little
    2. Add onions, wait fr onions to cook then add tomatoes, wait for it to get cooked and wilt - lower heat in order not to burn the veggies (about 3 minutes)
    3. Add the bottle gourd, saute for minute or two until it is a little cooked but not too soft
