- 1 bunch fresh coriander
- 1 handful fresh mint leaves
- 2 bulbs garlic (peeled)
- 2 Tbsp. coriander seeds
- 2 Tbsp. cumin seeds
- 1 Tbsp. caraway seeds
- 1 Tbsp. smoked paprika
- 1 tsp. ground cinnamon
- 2 lemons (large)
- 100 mL olive oil (quality)
- 1/2 tsp. sea salt
- 1/2 tsp. freshly ground black pepper
- 4 squid (prepared, ask your Fishmonger, cut in half centimetre slices)
- 250 grams baby potatoes (waxy, washed and par-boiled then sliced)
- 75 grams chorizo (braised, and a little of the flavoured oil)
- 75 grams sweet red pepper (roasted, sliced)
- 50 grams black olives (good quality)
- 2 Tbsp. harissa paste
- chopped coriander (A small handful of freshly)
- 1/2 lemon
- salad leaves (Mixed)
