- 2 Tbsp. oil (divided)
- 2 red bell peppers (medium, seeds removed and diced)
- 4 pork sausages (large, approx ½ pound, casings removed)
- 400 grams chopped tomatoes (carton, in juice)
- 60 mL water (or stock*)
- 2 Tbsp. basil pesto (homemade or store bought)
- heavy cream (2 - 3 tablespoons double)
- 50 grams cheese (grated, I used a mixture of Parmesan & mozzarella)
