- nonstick cooking spray
- 8 oz. breakfast sausage (removed from casing)
- 4 oz. cremini mushrooms
- 1/2 red bell pepper
- 1/2 yellow bell pepper (or green)
- 1 scallion
- 1 Tbsp. extra-virgin olive oil
- 9 large eggs
- 1/4 cup whole milk (or half and half)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3 oz. shredded cheddar cheese (3 oz. is about 3/4 cup)

Directions
- Preheat oven to 350°F.
- Spray a 12-cavity muffin tin generously with nonstick cooking spray.
- Place two sheets of paper towels on a large dinner plate, and set aside.

Love this recipe. It was fun to make because I love to cook so I can season each layer. And I'm very happy that it has no flour or bread product.
