The whole family liked this! I used Beyond Sausage (Hot Italian style), vegetable broth, and unsweetened non-dairy milk. Since the sausage & broth were salty, I omitted the salt. Since the sausage was spicy, I used just a dash of crushed red pepper. I supplemented the kale with cauliflower stem & leaves plus 8 oz sliced mushrooms.

The soup was AH-MAZING!!! I don’t eat pork so I substituted the pork sausage with boneless chicken breast cooked and cut into cubes and...I. LOVED. IT! I will definitely be making this again.

Loved this!!
I didn’t have spinach and we hate kale but it was so good without it too.
