Delish! Used sweet potatoes, added mushrooms, carrot, and used rosemary and sage i had on hand instead of thyme. Finally, added some soy and fish sauce to boost umami (instead of adding salt) and balsamic vinegar at the end for balance. Truly a versatile recipe.

We really liked this soup - it’s perfect for a cool fall afternoon or evening. Added some additional spices (basil, rosemary, oregano, and bay leaf) and a couple dashes of balsamic vinegar towards the end of cooking. Yum! 👌

I have made this several times and it is a favorite go to dish. I used veggie sausage. Easy to make with a wonderful blend of flavors.

Fantastic! I had some tomatoes from the garden that needed to be used up and I seeded them and through them into my VitaMix and added them to the soup as well!
