- 1 tsp. extra virgin olive oil
- 3 sausage links (spicy or sweet Italian chicken, thinly sliced)
- 1/2 cup olive oil (sun-dried tomatoes, drained, patted dry, and thinly sliced)
- 3 baby arugula (packed cups)
- 1/3 cup fresh basil leaves
- 1/3 cup walnuts
- 3 garlic cloves (peeled and smashed)
- 1/2 lemon
- 1/4 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 2 oz. goat cheese
- 2 Tbsp. extra virgin olive oil (You can also use the oil from the sun-dried tomato jar if you’re feeling fancy.)
- 2 tsp. extra virgin olive oil
- 2 garlic cloves (minced)
- 1/4 cup whole wheat panko breadcrumbs
