Sausage and Rice Noodle Salad

  • 7 ounces rice stick noodles (dried large)
  • 3 stalks celery (sliced on the diagonal)
  • 3 green onions (thinly sliced)
  • 2 tablespoons white wine vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger (grated)
  • 4 pork sausages (thin)
  • 1 red pepper (large, thinly sliced)
  • 1/3 cup basil leaves (small)

    Directions

    1. Cook noodles in a large saucepan of boiling water according to package directions. Drain; rinse under cold running water. Drain well. Place in a large serving bowl. Add celery and onion; toss to combine.
    2. Meanwhile, mix vinegar, soy sauce, sesame oil and ginger in a small bowl.
    3. Preheat a grill pan on medium-high heat. Add sausages and red pepper; cook for 6-8 mins, turning, until browned and cooked through. Transfer sausages to a cutting board; cut into thick slices on the diagonal. Add sausage, red pepper and dressing to noodle mixture; toss to coat well. Sprinkle with basil. Serve salad warm.
