  • 1 pound spicy Italian sausage (can use mild)
  • 5 tablespoons unsalted butter (separated)
  • 1 tablespoon olive oil
  • 3/4 cup carrots
  • 3/4 cup diced celery
  • 3/4 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 4 cups baby gold potatoes (chopped)
  • 1 teaspoon dried basil
  • 4 cups chicken stock (or chicken broth)
  • 1/4 cup all purpose flour
  • 3 cups 1% milk
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups extra sharp cheddar cheese
  • 1/4 cup sour cream (fat free is great)
  • 1 teaspoon dried parsley

    I only made a couple of small changes based on what I had. I used red potatoes, mild cheddar, omitted the celery, and used mild sausage. This was an all around hit, even with my husband who doesn't normally like potato soup. I will use sharp cheddar next time, I can tell that would make it even better. I actually liked using the red potatoes because they held up well in the base. Will definitely make this again.

    It was delicious. I halved the recipe but added more veggies then strictly half and more garlic. I also used mild turkey Italian sausages as that’s what I had on hand but spiced it up with red pepper flakes. I will definitely be making it again.

    Excellent. A very good blend with the cream and ingredients. I added kale & a handful of chopped cabbage, as well as some celery salt, went lighter on potatoes, but no doubt this is fine as instructed. My kids liked it, too, which was part of the goal (& one reason for additions—I slip kale in wherever I can). Very tasty, very simple. Kids are already asking for leftovers tomorrow. Thanks for the recipe & the suggested side dishes. This will become a regular dish.

    Best soup yet even my dads girlfriend loved it and shared with her coworkers I used turkey sausage like suggested by another user. I also added mushrooms which gave it a nice texture.

    This turned out AMAZING. So much flavor and beautiful texture with the roux. I added a cup of each veggie and mushrooms. Also, i sauteed the garlic first for 30 sec before adding veggies. i used only half a lb of turkey sausage, still delish

    So tasty! I added cremini mushrooms, and 1/4 cup of fresh grated Parmesan Cheese, then garnished with fresh parsley. So creamy and rich!

    Delicious! I added mushrooms and it was absolutely perfect! I also used low fat Greek yogurt instead of sour cream but this recipe was awesome! My husband loved it! Made with some biscuits on the side!l.

    Tastes great! Let people Add more salt and pepper when eating so it can to their own personal liking. We did use whole milk and didn’t seem to heavy.

    A hearty, rich soup. I think I'd try using ground turkey next time and add some Italian seasoning... The family loved it, definitely will make it again.

    Definitely could have reduced the instructions for how simply the dish actually is. I don’t feel like the recipe needs that much cream, we opted not to add the sour cream. I would be interested in a healthier version, but it was delicious, and I would definitely make it again. My end result didn’t look like the picture, but that’s okay because I’m proud of how it turned out!
