    This soup turned out great! I actually blended the potatoes and veggies with a immersion blender to give it a smoother texture, then added the cream sauce. It made the soup very thick and creamy. It’s a family favorite.

    It was really creamy and delicious. It’s really important to do the roux right for the sake of the thickness. We’re definitely going to do this one again.

    Used in instant pot on crock pot setting. 4 hrs on normal setting and was perfect. After it was done, I was too lazy to make a sauce so I just added cream and ladled out some and added cornstarch, then back in to thicken. If you're familiar with instant pot, the sautee setting brings it back up to a low boil so it thickens. I saw this comment and it concerned me mine would be thin but it was incredibly creamy. Family had seconds and gave it a 10!
