- 4 russet potatoes (medium, peeled and chopped into ½ inch cubes)
- 1 can great northern beans
- 4 cups chicken stock (I used homemade, low sodium stock)
- 1 tsp. dried thyme
- 3 cloves garlic (minced or crushed)
- 2 Tbsp. olive oil
- salt
- pepper
- 1/4 cup heavy cream (or milk if you want a lighter soup)
- white cheddar (The sharpest, you can find, shredded for topping.)
