This recipe was amazing I used chorizo and it was perfect next time I will add green chiles. I thought the cottage cheese was odd when I read the recipe but ithe author is right it adds some texture and creaminess I used 1/2 cheddar and 1/2 white Mexican cheese (the kind used in quesadillas) super easy to prepare I will definitely add this to my favorites!
