I love this breakfast casserole! I make different variations of it as well. It's perfect to make Sunday evening, portion out, and reheat throughout the week for quick breakfast. I suggest experimenting for whatever veggies you personally enjoy. I've used broccoli, mushrooms, onions, peppers, asparagus, etc.
