really super easy and yummy! i did crush up some tortilla chips and put them on top along with sour cream. the veggie part was a little soupy but i didnt think that bad at all. i am sure my salsa kind of was part of why it turned out soupy though. either way, the husband loved it! delicious and will make it again!

This is going into my regular rotation! It was easy and delicious. I didn't have much salsa so I used (canned) fire roasted tomatos instead. I did use a little salsa on top as a condiment, while my daughter used the sour cream instead. For those saying it's too soupy; I would say, be sure to drain the ingredients first and use a slotted spoon when serving the corn mixture. Using these methods, mine was not soupy at all.

I have made this many times. We reallly like the recipe I now put cauliflower and pepper flakes in it since I ran out of jalapeno This is such a great way to get veggies in a meal

My family liked it but doesnt want me to make it again. It was flavorful but the veggie medley its cooked in was soupy.

An excellent dish. Living in France, I'd rather prefer to put mozzarella instead of Mexican cheese.

This was an easy and tasty dinner. I only used two chicken breasts and there was a nice amount of veggie and beans to go with each portion.
