- 100 grams all purpose flour (+ more for dusting)
- 2 Tbsp. olive oil
- 1/2 cup ice cold water (minus 2 tablespoon)
- 1 tsp. red wine vinegar (or lemon juice)
- 1 tsp. cumin seeds (optional, I skipped it this time but it gives a nice flavor)
- 1 pinch salt
- 1 Tbsp. almond milk (for brushing the dough right before baking)
- 4 small potatoes
- 1 Tbsp. oil
- 1/2 tsp. mustard
- 1 tsp. coriander seed (crushed)
- 1/2 cup chopped onion
- 1/4 cup frozen peas (thawed)
- 2 garlic cloves (minced)
- 2 tsp. ginger (grated)
- 1 cup baby spinach (chopped)
- 2 tsp. cumin powder
- 1 tsp. turmeric powder
- 1/2 tsp. red chili powder
- 1 Tbsp. lemon juice
- 3 cilantro leaves (chopped)
