- 2 1/2 cups blanched almond flour (such as Honeyville)
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 6 Tbsp. honey
- 1/4 cup coconut oil (softened or liquid)
- 1 Tbsp. vanilla
- 1 tsp. lemon juice
- 3 whole eggs (large room temp)
- 1 can full fat coconut milk (about 1 1/2 cups, I used guar gum-free Natural Value)
- 1/2 cup honey (mild flavored, or maple syrup)
- 1 pinch sea salt
- 1 ghee (rounded tablespoon, or butter, can sub palm shortening or coconut oil)
- 2 tsp. vanilla extract
- 1/4 cup shredded coconut (finely, plus 2 more tablespoons for garnishing)
- 1 bag chocolate chips (Enjoy Life, melted in a double boiler)
